Coffee cake with nutella icing

The seek for an interesting cake is no mean feat. If you also have a thousand ideas for what you would like to cook – know that you are lost. After hours of browsing blogs, websites and paging through books, it finally succeeded. Humid, heavy, strongly coffee cake with a liqueur addition and nutella icing is a hit (of course I would not be me if I won’t add something). Let’s take a pen, make a shopping list and prepare for a holiday baking.

By the way, it is an interesting experience, to bake an easter cake before holidays. Like before party 😉

Ingredients:

All ingredients should be in a room temperature. Proportions for a 23 cm baking mold.

STEP 1: Brea 1/2 cup of coffee, add the liqueur and maple syrup. Stir and leave to cool. Set oven to 180 degrees. Grease mold with butter and we pour flour inside.
STEP 2: In a bowl, using a scutcher mix together two flours, baking powder, salt and baking soda.
STEP 3: Grind the butter and sugar using medium speed for 3 minutes. One by one, add one egg, each time carefully combining the ingredients with a mixer.
STEP 4: In 3 rounds we add the dry ingredients alternately with coffee (we start with flour, then grind, pour some coffee, grind, etc. finish adding the dry ingredients).

We pour dough to mold and bake for around 40 minutes, till the baking tester would be dry. After bake we put the cake on a crate to let it cool down. After 15 minutes we turn the mold upside down and take the cake outside (it should pull out easily).

Icing:

We heat up Nutella and milk in a pot over low heat, we mix until it become a smooth mass. Set aside to cool down. Pour it over a cool cake and sprinkle with nuts.

Warning! If we want to achieve a denser icing, add less milk or more nutella. In icing presented in pictures I used more milk, everything depends on our liking.
